This sugar syrup is designed to best imitate malt extract. It contains a high percentage of maltose, but is colourless and flavourless. Gives a fuller bodied and less drier beer than pure dextrose. One litre replaces 1.2 kilograms of dextrose and is sufficient for most beer kits.
Corn syrup which contains maltose and glucose in the proportions necessary for good fermentation. Hi-maltose syrup is 72% fermentable sugar on an as is basis. Small amounts may be added to the kettle at the end of the boil to adjust the Plato (SpG) to the desired level without altering the color or flavor. Larger amounts may be added to the kettle at the end of the boil to increase the alcohol content of the finished beer without altering the color or flavor. Up to 40% of Plato (total solids) may be used to reduce the malty-grainy flavor of beer.
