Their Limited Release Programs
They've been announced! The RJ Spagnols' Cru Select Restricted Quantities
and Winexpert's Selection Limited Editions kits information is now
available on our Brewery Lane
web site. This program has a huge following with more winemakers
coming on board every year. It's no wonder. These kits seem to get
better with each new release.
If
you are not familiar with the limited release program here is how
it works. Each year RJ Spagnols and Winexpert choose a series of
special kits to be released once a month in January, February, March
and April. The kits are made by order only so they are in limited
supply. These kits are the showcase of the respective manufacturers
so they make a great effort to source the best juices from around
the world. Most of these kits end up winning medals in prestigious
competitions.

Brew House Oktoberfest is Back
A Brew House tradition continues with the release of the famous
seasonal beer — Oktoberfest. It’ll only be here for a short while
so hurry in and get yours today! Historically brewed in spring and
stored in cool caves over summer, Oktoberfest would reach its peak
of flavour just in time for the fall festival. With the advent of
refrigeration, brewers were able to brew a similar beer all year.

Coopers Carbonation Drops
Carbonation Drops are a convenient, no mess, no fuss alternative
to priming sugar. Carbonation Drops dissolve quickly without the
need for inverting or shaking the bottle. The dosage required is
one drop per 345 - 375ml bottle.

Vintner's Reserve Australian Chardonnay
Chardonnay is made everywhere, from California to Bulgaria, but
it’s the Australians who make the biggest, boldest, most easily
identifiable style of wine. Golden in colour, this wine has peach
and mango fruit aromas, all enveloped in a vanilla-laden oak finish.
And what a finish! Supple and slightly buttery, this wine lingers
on the palate with layers of toast and spice.
Two Recipes for the Enlightened Homebrewer
Beer makers love experimenting. With this in mind I have chosen
a couple of easy and safe recipes that will “spice” up your brew.
These recipes give subtle flavours that are noticeable but not overpowering.
Extra Smooth Bitter
The addition of Molasses produces a slight buttery character which
smooths the perceived level of bitterness.
Ingredients:
1.7 kg Coopers Bitter
1 kg Muntons Beer Kit Enhancer
200 g Molasses
Method:
Dissolve Coopers Bitter, Beer Kit Enhancer and Molasses in 3 litres
of hot water. Fill fermentor with cool water to the 23 litre mark
and stir. Sprinkle supplied yeast over the wort surface. Ferment
temperature should be in the range 21º - 27ºC. Bottle when specific
gravity has reached 1.010 (or two readings the same over 24 hours).
Old Spiced
Spice up your Brew! A touch of cinnamon gives a noticeable refreshing
flavour to dark beers.
Ingredients:
1.7 kg Coopers Dark Ale
1 kg Muntons Beer Kit Enhancer
2 tsp Ground Cinnamon
Method:
Dissolve Coopers Dark Ale, Beer Kit Enhancer and Cinnamon in 2 litres
of hot water. Fill fermentor with cool water to the 23 litre mark
and stir. Sprinkle supplied yeast over the wort surface. Ferment
temperature should be in the range 20ºC -23ºC if possible.
Your Questions
Should I rehydrate my beer yeast or just sprinkle it on?
Beer and wine kit manufacturers instruct you to sprinkle the yeast
on top of the wort or must but yeast manufacturers tell us it’s
very important to rehydrate the yeast. So who do we listen to?
To get the highest number of viable cells and strongest fermentation
you should follow the yeast manufacturers instructions and rehydrate
the yeast. But there is one problem with this. If you don’t follow
the rehydration instructions exactly you could end up damaging more
cells than by just sprinkling. That’s why you are instructed by
kit manufacturers to sprinkle. It’s really a numbers game. They
believe that there will be many more failures caused by improper
yeast rehydration than failures caused by yeast damage from sprinkling.
We recommend that you rehydrate if you are sure that you will follow
the directions exactly. If you're the type of person who rather
not bother with details then go ahead and sprinkle your yeast.
